8-inch Chef's Knife Review
This is a stainless steel 8 inch chef's knife from Martello Technology. This is a very decent knife over all. I was kind of suprised that this knife did not come with any kind of sleeve since it is a quality knife.
To start with the knife seems to balanced nicely. There is a little more weight to the edge but that has a great purpose. Now for the added weight for the blade will actually increase the edge life of your blade. It will pull done through what you are cutting easier with less force.
The edge of the blade is very sharp. I have been using it now for about a month and have not seen any lose of sharpness. I have used it to cut meats, veggies, and cleaning fruits. I have hit a few bones while cleaning some pieces of meat and it does not show any problems from that either. I do not recommend slamming any blade abusively against bones, wood, or seed cores regardless of the knife.
If you are looking for a good chef's knife for around the kitchen this is for sure one to check out. This knife comes in at the above average performance at a very inexpensive price tag. It is stainless steel so it will be hard to destroy unless you put forth the effor to do so, has good balance, and nice weight at the blade.
